Scientists have found that by transferring certain rat genes into lettuce, they can turn on the plant’s latent Vitamin-C-producing pathway. They increased the level of Vitamin C in lettuce by 700 percent. They will now try to discover ways to stimulate the Vitamin C gene in plants with what they learned from the rat-gene work.
